Alright girls... it's time for a tasty treat! I made this recipe yesterday.
It's soooo divine, I must share it with you.
I started out using a recipe from my Aunt Patty, but altered it a bit to use what I had on hand.
Here's my version!
SweetMissDaisy's Pineapple Upside Down Cake
Aunt Patty says it's important to use a glass pan - pineapple can react with metal and make your cake taste metallic! I used an 8x8 square glass baking pan. You could also use a 9x9 glass pie dish.
Topping (cooked in pan):
4 Tablespoons butter, melted
1 cup brown sugar
3 small cans CHUNKED pineapple
Melt 4 Tablespoons of butter in the bottom of the glass baking pan. Spread 1 cup brown sugar on top of the melted butter. Drain 3 small cans (or 1 large can + 1 small can) CHUNKED pineapple, and place pineapple chunks on top of the brown sugar. You don't need the pineapple juice for this recipe, so mix it with some OJ and enjoy a fruity drink while you wait for your cake to bake!
Cake:
1/2 cup butter room temperature
1/2 cup sugar
1 egg
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 1/2 cup flour
Mix together the cake ingredients and spread over top of the pineapple chunks (it'll be thick!). Bake at 350 degrees for 35-40 minutes.
Let it sit for 5 minutes, then turn it over onto a plate and serve, or leave it all in the pan and serve like a cobbler.
Yummy! Deeee-lish!

YUM-O! I will definitely be making this delicious sounding recipe!!! I LOVE how you use "chunks" of pineapple in this recipe - what a fabulous idea. I'll let you know how mine comes out....and how long it takes my friends and family to devour it! :-)

It was gone in a flash last night. I think that this might just be the yellow cake recipe that my grandpa has been looking for! I am going to make it up for him this weekend and see if it is. Great recipe and my family loved it and requested more!

Yummmm, sounds like comfort food to me. My mom used to make it when I was young - always adored it! I am printing off a copy of *Anna's own* and will try that just as soon as I get to the store for the pineapples :) Thanks for sharing!

I just returned from a snowy, cold visit with family in New York State...had fun! Trying to get back in the loop with your blog. I see you are secretly stamping. Oh the agony of waiting to see your creations! Sorry to read that you've been feeling crummy since returning from CHA...no fun! Ahhh, childhood memories came with this post. My Mom used to make pineapple upside down cake quite often, but in her black cast iron skillet. TFS and definitely a YUM recipe! And of course, love the photo's in previous posts!

Pineapple upside down cake is a hubbys favorite! His bday is Monday, and I will be making him one. Gotta admit I usually doctor up a boxed cake mix...always use the pineapple just to replace the water.
and...where are the cherries?? Must have cherries poking out of the pineapple :)
(kind of startled me when I saw Aunt Patty !, was trying to remember when I gave you my recipe! ) LOL... it's still early and no school here today. Good think cuz now my DD has the sickies!

My hubby's FAVORITE cake!!! He requests this every year for his birthday, so of course, I flash a smile and oblige him with this cake. I love that you have a smaller version - definitely gonna try this one out. He can eat this square pan all by himself. :-)

OOOOOHHHHH, that sounds SO yummy! You know, my Mom always baked P-U-D cakes in a glass dish, and I never knew why. Thank you for the tip! I would have never known to use the glass!
I may just have to see if I have some pineapple in the cupboard, it's snowing here, and has been dreary and cold all day. I think a cake might make the evening nicer! :D

WOW! sounds great-going to try it, this is my favorite cake (my mom used to make it for my birthday every year; her recipe made it the stove top in a cast iron skillet but the cake was a box mix) and I've never had it with a homemade cake part. Thanks for sharing (and I love your sweet girl illustration that I KNOW You made especially for your blog post!)
